Apple Pancakes with Bacon and Sweet Apple Syrup

(4 portions)

Sunday morning breakfast, the newspaper, and coffee.

2 cups Sifted self raising flour
1 cup Castor sugar
1 tsp Baking powder
8 Eggs
2 cups Milk
25 mls Lemon juice
25 gms Melted butter
4 Rashers bacon
Clarified butter
300 mls Gusto sweet apple syrup
Cinnamon sugar
Sift the dry ingredients together. In a separate bowl beat eggs, add milk, lemon juice, and melted butter. Pour into dry ingredients and combine until well mixed but not over beaten.
De-core apples and slice into thick slices, roll in cinnamon sugar and grill until golden.
Melt butter in a large flat frypan and pour mixture onto pan. Allow three pancakes per person.
Grill bacon and keep warm.
Layer pancakes and top with bacon and three rings of apple per person.
Drizzle with syrup and sieve icing sugar over.
Serve immediately.
