Apple Syrup Cake

(6-8 slices)

Delicious served hot with vanilla ice cream on the side
250gms softened butter
1 grated apple
2 eggs
2 cups flour
1 1/2 cups sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 cup milk

3/4 cup tart apple syrup
1/4 cup sugar
Beat the butter and sugar until creamy
Mix in the grated apple and eggs
Sift flour, baking soda, and baking powder into creamed mixture
Blend in the milk
Turn into a 23cm lightly greased and floured cake tin
Bake at 180 C for 40-45 mins
Remove cake from oven
Pour the topping over the hot cake and leave in tin to cool
Remove from tin when cool

Gently warm the tart apple syrup in a heavy saucepan, and stir in the sugar to dissolve
Leave to cool
