BitterSweet Apple Chips

(Makes 20-25 chips)

Great as ice cream wafers or crackers with pate.
1 Cup Caster sugar
125 mls Gusto Tart Apple Syrup
2 Cups Water
1/4 Cup Freshly squeezed lemon juice
20-25 Thinly sliced apple wafers (Granny Smith’s are great for this recipe)

Bring sugar, water, apple syrup, and lemon juice to a simmer.
Add the apple slices and simmer in the syrup for 10 minutes or until translucent.
Gently remove the apple slices one at a time, and lay them flat on a sheet of baking paper.
Bake at 225 C for 1 hour, or until the apples are thoroughly dry.
Carefully transfer the chips to a cool rack.
Store in an airtight container at room temperature.
