(This should be enough for 25 people as a full meal of 45 people as a light supper)
1 cup of Gusto Sweet Apple Syrup
8-9kg Leg of NZ Free Range Ham on the bone
10 Small Braeburn Apples, Washed and Dried
3 Tablespoons whole grain mustard
1/4 cup extra Gusto Sweet Apple Syrup
Pre-Heat oven to 180 C.
Run a knife around the shank edge of the Ham
Carefully slice under the edge of the rind at the base of the ham, then use your fingers to ease between the rind and the fat and pull gently to remove the rind.
Use a sharp knife to score the fat in a diamond pattern, making cuts to 3mm deep.
Smear the scored fat with the mustard.
Place the ham in an oven pan large enough to catch any glze as it cooks.
Pour half the Gusto Apple Syrup evenly over the ham and bake for 60 minutes, drizzling over a little fo the remaining glaze 2-3 times as it cooks.
The ham is ready when it is heated through and the glaze has caramelized on the surface of fat.
Run a sharp knife around the central circumference of each apple to form a slit 1/4 cm deep.
Place apples in a separate oven pan, drizzle with extra Gusto Apple Syrup and bake for 25 minutes or until tender.
Slice the ham and serve warm or at room temperature.
Serve apples as an accompaniment to the Ham
